Vegetables offer fiber, vitamins and minerals without consuming a lot of calories. However corn, potatoes, peas and beans (not veggies anyway) are not allowed. Other vegetables such as green beans, carrots, mushrooms have a Scarsdale portion size of about what will fit in one cupped hand. Spinach, lettuce cabbage and other leafy vegetables are two cupped hands.
